
OVEN CARE INSTRUCTIONS
OVEN CARE…as described in section E of your owner’s manual.
IT IS ALWAYS A GOOD PRACTICE TO KEEP A WELL
MAINTAINED OVEN. YOUR OVEN IS PART OF YOUR MAIN
PRODUCTION EQUIPMENT. THESE FEW STEPS WILL HELP
YOUR OVEN STAY IN GOOD OPERATING CONDITION.
A WELL KEPT OVEN IS A PRODUCTIVE OVEN.
DAILY
1) Clean windows inside and out. Apply cleaner to cloth. Never apply
cleaner directly to window glass.
2) Clean light well lens and check bulbs(130V 250W and changing cautions)
3) Clean all shelves.
WEEKLY
1) Perform the daily tasks.
2) Oil all door chains and sprocket rod bearings.
MONTHLY
1) Perform all Daily and Weekly cleaning and servicing.
2) Vacuum the door plenum(s).
3) Tap bottom of heat deflector to remove residue from heat deflector shelf.
4) Empty crumb catchers after cleaning shelves.
5) Clean entire burner compartment behind plugs with vacuum after doing weekly cleaning, and vacuum the burner ribbon itself.
6) Check flame when lighting and adjust air, if necessary.
7) Vacuum inside service doors and under the entire oven.
8) Clean or vacuum top of oven.
9) Clean all blowers including burner, air curtain, and light well. Remove and clean the louvers. Clean impellers with a stiff brush and vacuum them.
Oil all blowers. Vacuum the breathing fins on the blowers themselves.
10) Spray gear shield on main rotation gear for one revolution.
11) With a grease gun, ONE pump of grease into the zirk fitting on the main bearing housing.
**CAUTION: DO NOT OVER GREASE. MAY CAUSE SEAL TO BURST.
12) Test Auxiliary System – Turn primary gas valve to PILOT and Auxiliary thermostat to Set Point. When oven reaches temperature, turn off Auxiliary thermostat and turn primary gas valve back to ON.
SEMI-ANNUALLY
1) Perform all Daily, Weekly, and Monthly cleaning and servicing.
2) Disassemble hood and clean. Clean ALL Duct work and Exhaust Fan at Roof.
**Dry clean only. Protect 6” shaft opening from debris while cleaning.
**Exhaust system can NOT be cleaned with liquid degreasers or water.
ANNUALLY
1) Perform all Daily, Weekly, and Monthly cleaning and servicing.
2) Tighten top bearing.
